How Many Calories Are In Fried Rice

Thai style fried rice
I love making fried rice. It's got to be one of the most satisfying things you can make with very few ingredients.
The basics of fried rice
There are loads of ways of making it and my preferred method came out of sitting in too many food stalls in Asia drinking too many iced coffees while sticking my nose in the direction of the chef.
You need:
Cooked rice- best if room temp or cold, but not straight out of the rice cooker. If you must use it freshly cooked, be sure that it has not been made with too much water.
Oil- peanut, sunflower, canola (not olive as it can't stand high temps and has too strong a flavour)
Onions, garlic, and assorted veggies of choice chopped into small pieces of about the same size. Cashews are also good!
Soy sauce
Fish sauce and/ or other flavourings- you can use an oyster or mushroom sauce, seasoning salt of any flavour you like (ie. chicken seasoning, fish seasoning, etc.) or my fave, tom yam stock cubes.
Fresh cucumber slices
Wedge of lime or lemon
Fresh coriander (Cilantro)
Ground black or white pepper
Method:
Put a wok or large frying pan on high heat (I mean really high). After it is hot, put in the oil.
If you are using meat, seafood, or tofu, fry it now and them set aside to add again later.
Quickly fry up the onions, garlic and veggies for a minute or two moving all the time.
Add the rice on top of the veggies.
Put on some soy sauce and fish sauce or other flavourings and keep turning over scooping from the bottom up and over so as not to mush up the rice and also to mix in the veggies. You can use the spatula/ cooking shovel to "chop" the rice apart if it is clumpy.
Keeping it moving, continue for a minute or two. You can turn the flame down if it starts to stick too much*. If you have fried up meat, seafood, or tofu you can add it in now to be sure that it is hot, but be careful not too cook it too much so that it becomes rubbery or hard.
Turn on to a plate and surround by sliced cucumber. Sprinkle coriander on top, give it two shakes of black or white pepper and put the lime wedge on the side.
Serve with chili sauce on the side.
* This never happens in Thailand because they tend to use more oil than we normally do.
The whole thing is quick, frantically cooked, cheap and very satisfying!
"Fried Rice" Cupcakes
Today is my daughter's 6th birthday and her favorite thing in the whole world is fried rice. I thought some birthday fried rice cupcakes would be appropriate. :D
